Gluten-free bread recipe

Ingredients

  • 2 eggs
  • 2 cups of water (500 ml)
  • ½ cup extra virgin olive oil (100 g)
  • 2 tablespoons of brown sugar (20 g)
  • 1 tablespoon sea salt (10 g)
  • 2 cups buckwheat flour (220 g)
  • 1 cup of rice flour (120 g)
  • 1 sachet of dry yeast powder (12 g)
  • Sunflower, pumpkin, sesame, flax or chia seeds (optional, to decorate)

  • Blender.

What should you do?

  • First, we will beat the two eggs for at least one minute. This step is important so that the bread is spongy.
  • Next, we will add the liquid ingredients, water and oil , and beat again.

Note : If the ambient temperature is cold, the water should be hot.

  • Later we will add the sugar and salt, beat and set aside.
  • We will dry mix the two flours and add them little by little to the mixer, to mix everything well again.
  • Finally we will add the yeast and beat again. The result will be a fairly liquid mass.
  • We will preheat the oven to 200 ºC and, for 15 minutes, we will put the bread dough in the refrigerator . The sudden change in temperature will activate the yeast process and we will achieve a fluffier bread.
  • After that time, we will put the bread in the mold and, if we wish, we will sprinkle some seeds on top.
  • We will put it in the oven and cook it for 40 minutes at 180 ºC.
  • After that time we will check that the inside of the bread is well done with the help of a knife. If it comes out clean, it’s ready.

  • Spices such as ginger , cinnamon, cardamom or cayenne pepper.
  • Aromatic herbs such as oregano, thyme, rosemary or basil.
