Ingredients

  • The juice of ½ lemon.
  • Pastry yeast.
  • Vanilla or cinnamon essence.
  • 2 medium eggs (120 g).
  • 2 glasses of vegetable drink (500 ml).
  • 3 cups of ground oats (300 g).
  • 1 cup of rice flour (100 g).
  • 2 cups of whole cane sugar (200 g).
  • 1 cup of coconut or sunflower oil (100 g).

Preparation

  • First of all, we preheat to 200 ºC.

  • At this point, we must put the dough in the refrigerator for half an hour, which will also help the muffins rise more and remain tender.
  • We will fill two thirds of each mold. We can sprinkle a little sugar on top to make them crispier.
  • We put it in the oven and bake for 15 or 20 minutes at 180 ºC.
  • We will check that the dough inside is well cooked before turning off the oven and letting them cool.

Sugar-free muffins?

Although in this recipe for oatmeal muffins we have used whole cane sugar, which is much healthier than white , we can also try sweetening them with honey, cane honey, agave syrup, maple syrup or cereal molasses.

We also have a natural sweetener which is stevia, but it must be purified, transparent in color, and with as little flavor as possible.

To start using it, we can combine it with sugar, and increase the amount in future recipes if we like the flavor. This way our muffins will be even healthier and lighter.
