Ingredients

  • A pinch of sea salt.
  • Chocolate chips (without milk).
  • 3 medium eggs (180 g).
  • 1 tablespoon baking powder (10 g).
  • 9 tablespoons of rolled oats (90 g).
  • 3 tablespoons of vanilla essence (30 g).
  • 3 cups of cassava starch (300 g).
  • 1 cup of agave syrup or coconut sugar (100 g).
  • 1 cup of mild olive, sunflower or coconut oil (100 g).
  • 2 glasses of coconut, gluten-free oatmeal or rice vegetable drink (500 ml).

Preparation

  • First of all, we will preheat the oven to 180 ºC.
  • We will beat the 3 eggs.
  • We will add the vanilla essence, the salt, the sweetener, the vegetable drink and the oil, and we will beat again.
  • Add the cassava starch and oats and beat again until all the ingredients are integrated.
  • Finally, we will add the yeast and mix everything well, which should have a fairly liquid texture.
  • We recommend using individual silicone molds for cupcakes or muffins , which we will fill about three quarters of.
  • We will add, in each section, a few chocolate chips.
  • We will bake for about 40 minutes at 180 ºC.  After this time, we will check that they are well cooked before removing them from the oven.
  • If silicone molds are used, we will remove them from them to prevent the base from getting wet.
  • We will let them cool to room temperature before consuming.
