Ingredients
- Vegetable oil
- 1 cup of sugar (200 g)
- ¼ vanilla bean
- 3 tablespoons of cocoa powder (45 g)
- ½ teaspoon salt (2.5 g)
- 3 medium eggs
- 1 tablespoon baking soda (9 g)
- 2 sticks of butter (150 g)
- ⅓ cup chopped walnuts (50 g)
- 1 bar of dark chocolate for dessert, sugar-free (150 g)
- 1 cup gluten-free rice flour for baking (200 g)
Preparation
- First of all, we preheat the oven to 170 ºC.
- We place the sticks of butter to melt in a bain-marie.
- We chop the chocolate as much as we can and add them to the pot with butter. Once all the dark chocolate pieces have melted, add the cocoa powder.
- We stir so that the three ingredients are mixed well and we add the sugar, little by little.
- On the other hand, we crack the eggs into a bowl and proceed to beat them with a fork. Next, we add the eggs to the mixture that we prepared previously and the vanilla pod .
- After stirring for a few seconds with sweeping movements, we add the flour, salt and baking soda.
- Then, we grease a baking tray with a little vegetable oil, pour the brownie dough, add the walnuts and put it in the oven for 20 minutes .
- Once our classic gluten-free brownie is ready, we let it cool at room temperature for 5 minutes and then we can proceed to cut it into small pieces.

Gluten-free brownie, the alternative with banana
Ingredients
- 1 medium egg
- 2 bananas
- 1 bar of sugar-free dark chocolate (150 g)
- 1 sachet of baker’s yeast (7 g)
- 2 tablespoons of cassava flour (30 g)
- 1 or 2 tablespoons of honey (25 or 50 g)
- Optional: cinnamon powder
Preparation
- First, we preheat the oven to 180 ºC.
- Peel and chop the bananas . Next, we proceed to process the pulp with the help of the hand blender.
- Separately, we chop the dark chocolate as much as we can and process it together with the banana pulp and honey.
- Crack the egg and add it to the mixture. We beat and add, little by little, the flour . The result should be a thick dough with small dark pieces.
- We place the mixture in a pot over medium heat and then add the yeast. We mix with slow and enveloping movements . If we wish, we can add a teaspoon of cinnamon powder. After a few minutes of cooking we will notice how the small dark pieces melt and the dough begins to look increasingly homogeneous.
- Once the dough reaches the desired thickness and texture, we pour it into the brownie molds and put them in the oven for 15 minutes at 200ºC. It should be noted that you can add some banana slices, as decoration, when pouring the dough into the molds.
