  • 1 tablespoon orange blossom water
  • 1 cup rice flour
  • ½ cup premix
  • 1 teaspoon guar gum
  • 1 pinch of salt
  • The juice of ½ lemon
  • 1 tablespoon baking powder
  • 120 g polished orange peel
  • 100 g cherries in syrup
  • 100 g raisins
  • 150 g of a mix of almonds, hazelnuts and lightly chopped walnuts

Preparation:

  • First, beat the butter and sugar until you get a creamy mixture.  Then, add the eggs one by one while continuing to beat with the electric beaters.
  • Next, add the lemon juice and orange blossom water.
  • Next, sift together the flour, premix, salt, guar gum and baking powder.
  • Then add this to the previous preparation. If it is too thick, add a little cream or milk.
  • Finally, in a container, put the chopped nuts and 1 tablespoon of flour. Once this is done, mix well and pour into the general mixture. Remember to stir well so that there is a homogeneous mass.
  • Finally, turn the oven on to 170°C and grease and flour (with rice flour) 2 pudding molds.
  • Then, pour half of the mixture into each one and cook for 50 minutes to 1 hour or until a toothpick inserted comes out dry and clean.
  • Once they are cold, you can decorate them by sprinkling icing sugar and a little water in drops, until you achieve the desired consistency. Instead of water you can use lemon or orange juice or some citrus liqueur.

  • First, beat the sugar with the butter and the zest of a lemon,  until creamy.

  • Then, sift the flour and leavening powder and add while continuing to beat.
  • Then, add the fruits, nuts and raisins. 
  • Finally, beat the egg whites until stiff and add them.
  • On the other hand, turn the oven on to 180°C.
  • Next, grease and flour a pudding mold with rice flour, pour out the preparation and paint with the egg yolk.
  • Then, let it cook for approximately 1 hour (depending on the type of oven). Insert a toothpick or knife to verify that the dough is ready.
  • Finally, remove from the oven and wait for it to cool before unmolding and cutting into slices.
